Consultation is recommended when ordering Petit Fours. A range of 2 1/2 to 3 1/2 pieces per person is the standard used for most events, keeping the selection at a minimum of 4 - 5 types.
Petit fours include any small cake or pastry that can be eaten in one or two bites. They are typically served at the end of a meal, with afternoon tea, or for buffets and receptions. The term comes from the French meaning “small oven”. This classification of pastries is broken down into three subgroups:
Petits fours glace – traditionally refers to small iced cakes or glazed pastry
Petits fours sec – a selection of dry cookies
Petits fours frais – includes fragile, perishable items such as miniature fruit tarts, éclairs, cream puffs, cheesecakes, mousses, bouchons, savarins, etc.
As a general rule, petits fours:
Are no larger than 2 - 2 1/2” in length
Are particularly festive when served in an assortment, including items from all subgroups
They are visually appealing in shape, color, and/or décor
